Recipe: Easy Cheesy Potato Cakes


Alter the quantity of ingredients for however many people you are feeding. The ingredients below made 15 small potato cakes which will feed approximately 5 adults.


  • 2 Large potatoes, peeled & chopped
  • 120g Grated cheddar
  • 2-3 Pinches dried mixed herbs
  • 1 Egg, beaten
  • Breadcrumbs


  1. Boil and mash potatoes.
  2. Stir in cheese & herbs.
  3. Mould into patties.
  4. Roll in egg, then in the breadcrumbs (I used shop bought breadcrumbs, less than £1 in Lidl)
  5. Place on baking tray and cook at 200 degrees for 20 minutes.


Meal idea- we are having them with sausages and vegetables.
