Recipe: Homemade Tomato & Veg Pasta Sauce

Here’s the recipe for our meal we had for tea this evening. I made it using up things we had in the cupboards and fridge! We’re near the end of the month and I don’t want to do a big food shop until next week, so I’m trying to use things up that we already have this week. You could add any other veg you have.

Serves approx 4 people.


1 tin chopped tomatoes

1 tablespoon cooking oil

1 dessert spoon Worcester sauce (optional)

1 onion

2 cloves garlic

1 dessert spoon tomato purée

Half a red pepper

2 leeks

Salt & pepper to taste



Put pasta on to boil.

Chop onion, leeks and red pepper, heat oil in a pan, add chopped veg & cook until soft.

Finely chop garlic and add to pan.

Sieve tinned tomatoes and add to pan with tomato purée & Worcester sauce.

Season to taste.

Keep pan on lowest heat while pasta is cooking.

Once everything is cooked, dish up pasta & sauce and top with cheese.
